Chef Michael Dubois built a new kind of French kitchen in the Philippines: real pastry, prepared food and future meal plans for people who want to eat beautifully and live better.

From Lille to Manila

Chef Michael Dubois was born in Lille, in the north of France. He first wanted to become a doctor, but the kitchen became his way of caring for people. He trained in pastry, bakery, chocolate, ice cream and cuisine, finishing at the top of his class.

After France, eight years in Hong Kong changed his palate forever. French technique gave him structure. Asia gave him freshness, acidity, fragrance and balance. In the Philippines, those worlds became one: French discipline, Asian soul and Filipino taste.

Why this exists

MD Bakery was created because eating better should not feel like losing joy. Chef Michael saw customers touched by diabetes, cholesterol, gluten sensitivity and family health concerns who still wanted bread, cake, pastry and comfort food.

The answer was not restriction. The answer was mastery: rebuild the food people miss with better structure.

The impossible work

A low-carb croissant should almost not exist. A cake without the usual sugar and gluten should almost not feel this indulgent. That is where Chef Michael’s craft matters.

Many brands can remove ingredients. Very few can bring back texture, pleasure and emotion after removing them.
